Ingredients
1/2 lb (200gr) Paccheri pasta
3/4lb (350gr.) green beans
1 potato, medium
1/4 lb (125gr.) Provolone Valpadana PDO cheese
1/3lb (150 gr.) cherry tomatoes
1 garlic clove
2-3 tbsp basil, chopped
1 tbsp bread crumbs
1 tbsp Parmesan cheese, grated
1 tsp parsley, finely chopped
1 egg
extra virgin olive oil
salt and pepper

Boil the pasta in abundant salted water until package al dente.
Peel and potatoes into medium sized pieces. Boil potatoes, beans and garlic in salted water for about 20 minutes until potatoes are cooked and beans are soft. Blend cooked veggies, basil, provolone Valpadana PDO cheese, salt and pepper in food processor to obtain a smooth consistency. Then mix in egg.
Preheat oven to 400 F.
Stuff the paccheri with vegetable mixture, placing as you go along onto a large baking sheet lined with parchment paper. Drizzle oil on top of stuffed pasta then sprinkle with bread crumbs, Parmesan cheese, and parsley. Chop tomatoes and position them around and on top of stuffed pasta.
Bake in oven for about 20 minutes until lightly golden.
