Ingredients
1 large cauliflower
1/2 cup olive oil
1/2 onion
2 garlic cloves
1 bay leaf
2 cups chicken broth
1 1/2 cups water
1/2 cup heavy cream
4.5 ounces (1/4 lb) Aged Provolone Valpadana PDO cheese
salt and freshly ground pepper
Serves: 4 Total Cook Time: approx. 1 hour
Directions
Preheat the oven to 350F. Cut the cauliflower and onion into medium sized pieces. Mix the cauliflower, onion, whole peeled garlic, salt, pepper and olive oil together on an oven rack. Bake for approx. 45 minutes until cauliflower is soft and slightly golden.
Meanwhile heat the broth, water and bay leaf on the stove in a large covered pot. Turn off pot once it reaches a boil, remove bay leaf.
Add cooked vegetables and heavy creamy to broth blending everything to a smooth consistency. Add cut up (or grated) pieces of provolone Valpadana PDO to soup, stirring so the residual heat of soup will melt the cheese.
Serve warm with perhaps a few pieces of warm toasty bread.
