ingredients
100gr (1/4 lb) veal loin
30gr (.06lb) sharp Provolone Valpadana PDO cheese
3 sage leaves
4 cherry tomatoes
1 tbsp extra virgin olive oil
1/2 garlic clove
salt and freshly ground black pepper
8 toothpicks
Makes: 8 mini skewers – Total Cook Time: 25 minutes
Directions
Cut the veal into cubes about the same size. Once cut place them in a bowl, and toss with torn sage, garlic, salt and pepper. Let meat come to room temperature, about 15 minutes.
Cut the tomatoes in half, and the cheese into equally sized cubes*. Put a spear onto half a tomato, a cube of cheese and then a piece of marinated veal.
Heat a grillpan** on medium high. Cook skewers turning frequently for about a total of 2 minutes. Serve warm and enjoy!
*Ensure that the meat is cut into pieces bigger than the cheese, so the cheese doesn’t initially touch the grill. This trick will help ensure the meat cooks before all the cheese melts away.
**Know your grill pan, use a paper towel to rub it with a bit of (olive) oil, to ensure the skewers don’t stick.
